Making Preserved Lemons



Sorry I've been a bit quiet on the blogging front lately. I've been busy at markets, moving house and generally settling into Melbourne life.

The new house I have moved into has a spectacular lemon tree. Every day there are several lemons on the ground ready for use. I have been juicing and freezing and now, thanks to the advice of Kate from Big Dreams Embroidery, have tried preserving them.

The recipe is simple. Slice the lemons longways into 4, 6 or 8 depending on size of lemons (ours are mammoth so I did 8) then squish down into a preserving jar between layers of salt and peppercorns. I juiced a couple of extra lemons to cover.

I'm looking forward to seeing how it works out. If anyone has any special recipes to share that I could use these in, I'd love to hear. :)
